CHARCUT is a new addition to the Calgary dining scene. The concept? A place that butchers and cures its own meat, raised by local farmers, and pairs it with other seasonal, local ingredients. The menu, which changes daily, is referred to as "chef-driven cuisine with Italian and Country French accents," and includes unique selections like Hotchkiss tomato salad with Old West Ranch buffalo mozzarella, a daily rotisserie selection and charcuterie boards of house-made sausage and cured meats.

CHARCUT is open for lunch from Monday to Friday and dinner seven days a week.
